World Travels - Maqluba

 I am back in Lebanon for my world travels series; just trying some recipes from all over the world, seeking out recipes that have been converted already or I can easily convert to being vegan.

Maqluba is normally made with layers of meat with vegetables with rice that you flip from the pan onto the plate.  It look fabulous; this pile of fragrant rice with aubergine, potato and peppers topped with pinenuts and usually almonds (I used hazelnuts).

I found the recipe on the excellent website Plant Based Folk and with a few tweeks produced this.






I served the maqluba with just a simple salad of cucumber and a green salad.. perfect for a summers day.
