Zanzibar Curry Powder

 


I hate buying off the shelf spice mixes. I love creating my own. I just love the process. You take some spices, you measure them out, you toast the seeds and then you grind the mix together whether it is by using an electric grinder or wrestling with your pestle and mortar.  It is not perfect. It is not precise. It has it's flaws.  But you produce this aromatic mix that is unique. You can tweek it and add more of what you like, you can omit certain spices, or just keep to tried and tested mix.  That is the joy of it.

Here is my version of a Zanzibari Curry Powder.... I may add some cloves to the mix because of the past history of Zanzibar with the growing of cloves. 


Instructions

  1. Dry pan toast the cumin, coriander, mustard, fennel and fenugreek seeds until aromatic. 
  2. Pour onto a plate to cool.
  3. Grind the cinnamon and the toasted spices together to a powder. (I use an electric grinder that does the trick very well).
  4. Combine with the rest of the ingredients and place in a spice jar.
