It is always pleasing when restaurants make vegetables the star of the dish. Root in Bristol does that in spades... The location is convenient(near M Shed), the environs are cool (in a shipping container) and food is impeccable. I was blown away by the smoked celeriac with a madeira jus and girolles... this humble vegetable was elevated to a transcendental plane (you can tell I loved it). I loved the kohlrabi with apple and horseradish; clean flavours. The hispi cabbage with caesar (I assume that this was a take on a caesar salad) and pickled shallots was very satisfying. I have some great ideas for dishes to try out in the future.
