Roasted Hispi Cabbage with Puree Borlotti Beans

I visited Dart's Farm recently where they sold the most wonderful hispi cabbage... it looks so devine.  So unusual to have a purple hispi cabbage.  I have been roasting hispi or sweetheart cabbage for years; it goes so well with smoked rapeseed oil (Fussells) and makes a great side dish.  But I wanted to make it into a comforting main meal.  The ingredients are simple, the flavours punchy and overall it is a great autumnal dish.

Ingredients

  • Half a hispi cabbage (it does not have to be purple)
Such beautiful patterning when cut in half
  • 100g butter (Naturli brand is a great vegan subsitute)
  • 1 tbsp miso
  • 1 tbsp chilli oil (adjust to your taste)
  • Rapeseed oil or fairly neutral oil (you can use smoked rapeseed oil if you can find it)
  • 2 cloves of garlic crushed
  • 2 tbsp of mixed seeds (pumpkin, linseed, sesame)
  • 300 ml vegetable stock
  • Borlotti beans (400g cooked) - either canned or cook yourself from dried

Homedod's grow these great Borlotti Beans in France (it is a British company that are expanding what is grown in this country and beyond)

Instructions

1. If you are using dried borlotti beans soak overnight and then cook for 30 to 40 minutes in water.
2. Combine the butter, chilli oil and miso together in a bowl.

3. Take the hispi cabbage and quarter it.  In a hot frying pan splash in the rapeseed oil and place the quartered cabbage in. Gently sear on all sides.

4. Once the cabbage has been seared coat in the butter/chilli oil/miso paste and place in a pre-heated oven (180 C).  Cook for about 30-40 minutes. You can use an air fryer as well at 180 C which should take around 15-20 minutes.

5. Whilst the cabbage is roasting take the cooked borlotti beans and with a little oil pan fry the beans for about 3 minutes.

6. Add crushed garlic and mix in throughly.

7. Add some vegetable stock into the beans and allow to cook for about 10 minutes gently mashing the mixture.

8. Puree the beans (I use an immersion blender that does a good job)
9. Plate up with a dollop of puree on the bottom, a slice of cabbage and then a sprinkle of the mixed seeds.
