Badrijani Nigvzit - Georgian Aubergine and Walnut Rolls |
Discovered this dish last year whilst enjoying the amazing aubergines from local
Linscombe Farm. The recipe comes from the website
'The Georgian Table' which I followed with some variations. My walnuts were not quite a ground up as in the recipe but it appears to be the norm that the walnut and garlic mixture for the filling is a paste. This is a very simple dish that packs a punch with the garlic and provides the all round satisfaction of the traditional but remarkable pairing of aubergine and walnuts. This is going to be a welcome addition to my summer dinners.
