Cauliflower and Pumpkin Seed Tacos

 


I have memories of the wonderful cauliflower and pumpkin seed tacos that I had at Chido Wey in Bristol many years ago and wanted to recreate the dish.  Armed with freshly made tortilla from Masa Tortillas I searched for a recipe online. Much to my surprise I came across a recipe from Jane Goodall... 

I leave out the sage and use canned tomatoes for my version....  The recipe is great with some avocado, vegan blue cheese and radishes (though I did not have them for this version). Really good if you can get your hand on fresh corn tortillas. The basic recipe can be frozen to bring out in later when you are busy.
