Kohlrabi and Lime Salad

We are blessed in having a mighty fine shop in Taunton, Somerset that is supplied by local growers.  You can often pick up vegetables that you do not normally find in the supermarkets.  Kohlrabi is one of those vegetables that are not so popular in the UK and so I always jump at the chance to pick up a bulb.  It is a vegetable that is so delicious raw and goes so well with apples; particularly quite sharp apples.

Ingredients

  • 1 kohlrabi, peeled and cut into 5mm by 5 cm batons (I use a tool that shreds vegetables into batons roughly this size)
  • 1/2 apple, peeled and cut into batons like above
  • Very small handful of coriander leaves
  • Very small handful of mint leaves
  • A few tarragon leaves (you can mix up the herbs and even use parsley)
  • 1 spring onion, trimmed and thinly sliced
  • 1/2 tbsp sesame seeds
  • Pinch of zest from a lime (you can use lemon)
  • 1 tbsp lime juice
  • 1/2 tbsp rapeseed/vegetable oil (something fairly neutral)
  • 1 garlic clove, peeled and crushed
  • Drizzle of sesame seed oil
  • Salt
Shredding the kohlrabi

Instructions

1. Put all the ingredients apart from the sesame seed oil into a bowl with a good pinch of salt.
2. Mix well and divide into two.
3. Drizzle the sesame seed oil over the top.
