Courgettes With Dill
Inspired by the fabulous feast at the Velvet Garden Summer Solstice party I was sought out a recipe for one of the dishes we had; courgettes with dill.
Courgettes With Dill
Ingredients
- 2 courgettes sliced
- Olive oil
- 1 shallot cut into half moon slices
- 1 garlic clove crushed
- Handful Dill/Parsley
- 1/2 tin tomatoes
Instructions
- Pan fry the courgette slices gently in a little oil olive. (Just lightly cooked so they have a bit of colour)
- Set aside the courgettes
- In the same pan fry the onion and after about 10 minutes add the garlic.
- Fry the garlic for about a minute and then add back in the courgette.
- Add the tomatoes and cook the courgettes through.
- Add some chopped dill and fold in.
- Serve with some fresh dill on top..
(I paired the courgettes with some potatoes (crisped up in the air fryer), a lovely green salad and a dollop of yoghurt.)
