Courgettes With Dill

 Inspired by the fabulous feast at the Velvet Garden Summer Solstice party I was sought out a recipe for one of the dishes we had; courgettes with dill.  


Courgettes With Dill

Ingredients

  • 2 courgettes sliced
  • Olive oil
  • 1 shallot cut into half moon slices
  • 1 garlic clove crushed
  • Handful Dill/Parsley
  • 1/2 tin tomatoes

Instructions

  1. Pan fry the courgette slices gently in a little oil olive. (Just lightly cooked so they have a bit of colour)
  2. Set aside the courgettes
  3. In the same pan fry the onion and after about 10 minutes add the garlic.
  4. Fry the garlic for about a minute and then add back in the courgette.
  5. Add the tomatoes and cook the courgettes through.
  6. Add some chopped dill and fold in.
  7. Serve with some fresh dill on top..

(I paired the courgettes with some potatoes (crisped up in the air fryer), a lovely green salad and a dollop of yoghurt.)
