A Vegan Take on Madrouba
I was wowed so much my Zanzibar/Omani cuisine of food writer Dina Macki that thought I would try another Omani recipe Madrouba; a porridge of rice, enriched by spices. Usually madrouba is made with chicken but I found this excellent vegan version from the The Vegan Physicist - https://veganphysicist.com/oman-vegan-madrouba/ .
The name madrouba means beaten rice (a fact that I was ignorant of so will have to try it again sometime properly). Anyway it was still delicious and that combination of turmeric, cumin, coriander, cinnamon, cardamom, nutmeg and very importantly dried limes made it beautifully flavoured. I was lucky enough to have a new shop open in my home town recently that actually stocked dried limes so took the opportunity to add them to my food pantry. The dish would go very well with baharat roasted cauliflower that I cooked before or the mchicha; that showstopping dish of spinach and coconut milk.
