Armenian Nutmeg Cake

Ingredients

  • Flour -1 cup
  • Baking Powder -1 tsp
  • Sugar -1cup
  • Butter or margarine -⅓ cup (cut into pieces)
  • Walnuts -¼ cup
  • Milk (I used oat milk but almond or hazelnut milk would also work) -¾ cup
  • Ground Nutmeg -½ tsp
  • Vinegar -1 tsp


Instructions

  1. Preheat the oven to 175C. 
  2. Mix the flour, baking powder and sugar together.
  3. Mix in the butter or margarine and rub it until the flour resembles bread crumbs.
  4. Divide the mixture into two.
  5. Grease a loose bottomed 7 1/2″/19-20 cm round pan.
  6. Place half of the flour mixture in the pan and press it until firm.
  7. In a separate bowl, add milk and baking soda together.
  8. Add vinegar and nutmeg to milk and whisk.
  9. Add this to the flour mixture left and mix well. The mixture will be thin.
  10. Pour the batter into the pan over the base.
  11. Sprinkle chopped walnuts on top.
  12. Bake the cake until the top is golden brown and when you insert a knife in the top it comes out clean. 
  13. If the cake browns fast, place a sheet of foil on top of the pan and bake until done.
  14. Remove the pan from the oven and allow it to cool.
  15. Place the pan on a firm smaller object, loosen the sides of the cake with a knife and gently remove the outer ring.
  16. With the help of a long spatula loosen the cake’s base and carefully transfer to a serving plate.
  17. Slice it up and enjoy.
