Andina - Shoreditch

Andina in Shoreditch produce the most exquisite Peruvian food for reasonable prices... I wish there was a restaurant like this closer. Instead everytime I go to London  I have to get my fix of Peruvian food.  So much inspiration with vegan and vegetarian dishes that I can try at home and 'veganise'.

Take the dish Tacu Tacu Quechua from Andina's Street Food section... a heady mix of braised aubergine, a quinoa patty and crumbled feta cheese. This recipe I will be stealing.

I went fully vegan with the beetroot tiradito; salt baked heritage beetroot in smoked tiger's milk, confit fennel and black quinoa with a garnish of salad leaves.

The dish ode to corn was divinely rich; a corn steamed dumpling, choclo corn succotash, sweet kale pesto and crushed cancha corn....  this I will try and emulate and produce a vegan version.

Vegan Ramen

I had the chance to try this great Vegan Ramen in Broadway Market some time ago.... Broadway Market in London on a Saturday has long been a destination for me when I chance to visit London.  It is great for street food... you name it they probably have it.  Fairly recently they have added a vegan market.... amazing...

Star of the vegan market at Broadway Market is this 'Nonkotsu' ramen; it is Mr Riyazis take on the classic Tonkotsu ramen without the meaty bones. Not having the meat component does not mean it lacks in umami; there is still a rich and flavourful broth. Do not know how they do it.
